WHere is a home-style version of a cocktail from a new menu. It's a party-sized prepared mix that's packed with flavours of a festive period, which makes it perfect for your celebration. Save the extra citrus syrup to use in breakfast cocktails, sweets, or to make another batch of bikinis.
Bikini Recipe
Makes enough for 10 guests
Ingredients for the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Premix (makes 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch
Method
Making the Cordial: Combine all the ingredients inside a pot, bring to a gentle boil, stirring so the sugar melts. Then, remove from the burner and leave to cool fully. Decant into a sterilised bottle, seal and store in the fridge, where it will keep for about one month.
Preparing the Cocktail Base: Combine all the liquids into one big jug, allow it to infuse for an hour, then pass it through , ideally through a fine cloth, so it's fully clarified.
For serving: Pour 85ml from the cocktail base into a cocktail shaker filled with ice, gently stirring lightly for a minute until cold. Filter into an cold coupe glass or equivalent, garnish with a few cranberries and finish using a light spray of mandarin oil over the drink.
